Once, in the form of either half-carcasses of cattle, of pigs and of sheep prequalified comes in the refrigerated trucks previously qualified, they are subjected to extrict controls of: temperature, pH, and microbiological cultives samples which are taken in to study in our laboratories.
 
So begins the traceability of the product, from the time that we proceed to the download, this is done in a temperature controled room, the middle channel is labeled with all its data. (Time of entry, vehicle carrier temperature, the average internal temperature channel, weight, origin of livestock discharge temperature.)
